So this morning I experimented with more new breakfast foods. I decided to make an egg sandwich that I found in Cook This, Not That (great cookbook with tons of simple recipes and quick meal suggestions, I totally recommend it). Sometimes I’ll make an egg and cheese sandwich on an English muffin, but I wanted to amp it up a little bit. This recipe is really quick and easy. Plus, it’s a healthier alternative to a breakfast sandwich you would buy out somewhere.
Here’s what you’ll need:
2 slices of turkey lunch meat
1 slice of American cheese
1 tomato slice
Here’s how you do it:
1. Fry the egg. Make sure it’s overlight, so that it’s cooked but the yolk is still gooey.
2. At the same time, put the turkey and cheese on a plate and nuke in the microwave for 45 seconds
3. Toast the English muffin
4. When the egg’s done, pile everything onto the muffin, starting with tomato, turkey and cheese, egg, and then guac on top.
It’s really simple, but I never really thought of making a breakfast sandwich with lunch meat before. It’s much healthier than sausage or bacon, and if you make homemade guacamole, it’s even better. Yummy!
